1. Mince onion for homemade hamburgers. You can also add in diy caramelized onions for extra flavor.
2. Finely mince garlic, put both into a bowl.
3. Mix together by hand with the pork and beef until homemade hamburger meat is well-blended.
4. Add homemade hamburger spices: garlic powder, onion powder, onion soup mix, and salt and pepper (Just add by feel, maybe 1/4 tsp each if you are looking for a measurement) and ketchup.
5. Mix homemade hamburger meat mixture by hand until blended.
6. This step is optional: To infuse the flavors of your homemade hamburger meat, put some saran wrap or tinfoil over the bowl and put into the fridge for anywhere between 3-6 hours.
You could additionally add some extra hamburger spices, and a super popular one is Emeril's BAM Burger spice, which you can find on Amazon right here for a super great price. It's awesome to have on hand.
7. Take homemade hamburger meat out of the fridge and mix in the egg with the meat using your hands and blend thoroughly. It should be quite a wet mixture by now.
8. Add breadcrumbs to homemade hamburger mixture, about 3 tbsp. at a time and blend each time by hand until hamburger meat no longer feels wet.
You want to feel confident that the homemade hamburger meat will hold the shape of a homemade hamburger patty at this point.
TIP: If you don't have breadcrumbs on hand, you can use crackers in your hamburger patties, just take about 10-20 crackers (soda crackers are great for doing this), place them in a ziplock bag and roll them with a rolling pin to crush and add to hamburger mixture.
9. Form the hamburger meat into hamburger patties.
Make the homemade hamburger patties large and flat in the middle. That way they will not plump up in the middle of the patty.
10. Grill homemade hamburger patties on a hot barbecue until the internal temperature reaches 160F and then put cheese on the top for 3 minutes before taking hamburgers off the grill.
Depending on your barbecue and how hot you like to have it, it takes about 20-25 mins to cook these homemade hamburger patties, but you can be sure by checking with a meat thermometer.
Choose the Right Meat: Start with a blend of ground beef that has a higher fat content. An 80/20 or 85/15 lean-to-fat ratio is ideal for juicy burgers. The fat adds flavor and moisture to the patties during cooking.
Handle the Meat Gently: Overhandling the meat can result in dense, dry burgers. Mix any seasonings or ingredients into the ground beef gently. Form the patties with a light touch, and avoid compacting the meat too much. Overworking the meat can lead to a tougher texture.
Create an Indentation: Before cooking, make a small indentation in the center of each patty with your thumb. This helps the patty cook more evenly by preventing it from puffing up in the middle. As the burger cooks, the indentation will fill in, keeping the surface level.
Season Well: Seasoning is crucial for flavor, but it also contributes to juiciness. Use a combination of salt, pepper, and any other desired seasonings. You can add finely chopped onions, garlic, or even a splash of Worcestershire sauce for added flavor.
Cook with Care: Pay attention to the cooking process. Overcooking is a common reason for dry burgers. Use a meat thermometer to ensure your burgers reach a safe internal temperature (160°F or 71°C for ground beef). Cook the burgers over medium-high heat, flipping them only once. Avoid pressing the burgers with the spatula, as this squeezes out the juices.
Bonus Tip: Rest the Patties: Allow the cooked patties to rest for a few minutes before serving. This gives the juices inside the meat a chance to redistribute, resulting in a juicier burger when you bite into it.

I use very similar minus pork, bread crumbs. I also add worchestchire sauce & liquid smoke. I prefer purple onions and let mix sit in refer for several hours so everything blends wonderfully. Of course my Parttys are quit big.
What fat content do you recommend for the ground beef
Hi Julie, you can try any onion soup mix and see how they turn out. Here is the one we use from Amazon: https://amzn.to/3O9i3RZ but we will update the article and include the link in the ingredient list for you as well. Happy cooking, would love to hear how they turn out with your soup mix!
What if I can’t get dried onion soup mix, can I use continental French onion soup instead?.
Hi Debbie, amazing! You are going to love this hamburger recipe :D Let us know how they turn out!
I pretty much use this recipe for meatloaf and almost the same for meatballs!!! I’ll have to try with hamburgers as I’m searching for the perfect hamburger recipe! Thanks!
Hi there Sue! This hamburger recipe can be make on the grill, in the oven or on the stove in a frying pan. No need to adjust the recipe, but if you are making on a pan on the stove, be sure to have enough oil so the meat doesn’t stick. If you are trying to flip the burger and it is sticking, that means it is either not ready on that side or doesn’t have enough oil. The recipe can absolutely stay the same :)
If I make them on the stove, are there any adjustments to the recipe?
Thank you!
Hi Carole,
Yes, these homemade hamburgers can absolutely be frozen. When making your hamburger patties, separate them with a piece of wax paper between each patty and store them in a sealed bag into the freezer. This is a great way to make a make-ahead of time meal! We hope you love this recipe as much as we do :D
Can these delicious hamburgers be frozen?
