This homemade marshmallow recipe is really fantastic and easy to make, plus, isn't it great to get away from all of the additives that are found in processed, store-bought foods? Go ahead, read the ingredient label on a bag of marshmallows. Need any more reasons to make these classic treats yourself? We don't!

You can also make and freeze your homemade marshmallows in freezer zip lock bags. Just make sure you give them a good dusting of powdered sugar before putting them in.

Note: If you are planning on making marshmallows for the same day, keep in mind that these gems will need to set overnight ;) I would also recommend reading this entire recipe first since timing is an important part of getting your marshmallow recipe just right. You will want to know what your next steps will be before you start.

Homemade Marshmallow Recipe

HERE IS WHAT YOU NEED: HOMEMADE MARSHMALLOW INGREDIENTS

Tools:

  • 13x9 pan
  • parchment
  • pam spray/oil spray
  • a candy thermometer

In your mixing bowl:

  • 1/2 cup cold water
  • 2.5 tbsp gelatin

In a pot or saucepan (will go on the stovetop):

  • 1/3 cup corn syrup (plain, not high fructose)
  • 1/2 cup water
  • 2 cups white sugar
  • 1/4 tsp salt
  • 2 tsp vanilla (or any other extract) *Note, if you don't have any, this is not a necessity, I have made these with zero extracts and still sooo delicious!

Marshmallow finishing powder (to be mostly used the next day, these will need some time to set!):

  • 1/2 cup corn starch
  • 1/2 cup icing (confectioners) sugar

How to make homemade marshmallows

HERE IS WHAT YOU DO: DIRECTIONS TO MAKE HOMEMADE MARSHMALLOWS

  1. Line a 13x9 pan with parchment for your homemade marshmallows. Be sure to use enough parchment so that the sides come up and out of the pan. I lined my pan one way and folded it over the sides, then used another sheet to line it the other way. You will use this to lift your finished marshmallows out of the pan tomorrow!
  2. Spray the parchment with an oil spray. I really love using Pam 100% coconut oil, but any oil spray will work.
  3. In a mixing bowl or your stand mixer, pour in your 1/2 cup cold water and add the 2.5 tbsp. of gelatin. Let sit for 20 minutes, you can set a timer here.
  4. In a saucepan, mix together the other 1/2 cup water, 1/3 cup of corn syrup, 2 cups of white sugar and the 1/4 tsp salt, but do not stir the mixture! I try to get a saucepan with a thick or heavy bottom. If you find that your meals tend to burn on the bottom, you may want to consider a heavier-bottomed pot set. 
  5. Bring the saucepan to a boil over medium-high heat, but remember to NOT stir it. You can gently swirl it if you would like, and check it often with a candy thermometer after about 5 minutes until it reaches 240 degrees F.
  6. Once your gelatin timer goes off, start your mixer on low to blend it a bit. Then, you can slowly begin to pour the hot 240-degree corn syrup mixture into the gelatin bowl. Be very careful here!! You do not want to splatter hot sugar syrup on yourself, so pour in slowly while mixer is in its lowest speed. Mix it on low speed until blended together, then turn mixer to medium-high speed. NOTE: It does not smell so pleasant at this point. Don't worry, they will become those sweet, fluffy treats soon! This smell is normal.
  7. Now the fun (aka tricky) part: you get to mix this for somewhere between 10-12 minutes. You don't want to mix it too little, or you will have mushy marshmallows. Still tasty but not so recognizable as marshmallows. And if you over mix it to the point where the mixture cools, you will have a heck of a time getting it out of the bowl into your pan. It will be your ultimate duty to find the sweet spot where it is mixed well enough and the bowl is still a bit warm to the touch. We say 10-12 minutes should do the trick! 
  8. TIP: Spray a plastic or silicone spatula with oil for this part: Spoon the now white, thick mixture out into your pan. You will have to work quickly, basically, think to yourself "I have 30 seconds to work with this stuff, then it will set". You will pour it into the pan, then immediately smooth out so it is all even on top. 
  9. Separate bowl: Mix the cornstarch and icing sugar together with a whisk. Sift and sprinkle a bit of it over the marshmallow, then put a plastic cover over them and say nite nite. Set the rest of the cornstarch mix aside as well, you will use it in the morning!
  10. NEXT DAY: Sprinkle a few tablespoons of the cornstarch mix that is left onto a cutting board or large surface.
  11. Turn your marshmallows out onto the powdered surface.
  12. Peel off the parchment and spray a knife with some oil spray. Then sift/sprinkle another few tablespoons of the powder on top of the marshmallows.
  13. Cut them any way you choose! Large squares, mini's, or what I like to do, powder the cups I like to use for hot chocolate and cut circles out! That way, you have perfectly-sized marshmallows to fit right in your hot chocolate cup. Something really cute, if you have star-shaped cookie cutters or heart-shaped cookie cutters to cut these out! Sprinkle generously with your powder to keep from sticking to one another.

FUN TIP: You can also use food drawing pens to decorate your marshmallows! A cute idea is to draw snowman faces on your marshmallows and make little snowman bodies to set into your hot cocoa or hot chocolate! Finish your snowmen off by adding little pretzel sticks as the snowman's arms! These little cuties look adorable relaxing in a warm drink!
