We have a French onion soup recipe that I get asked to share all the time. It is a really easy French onion soup recipe that tastes absolutely delicious.

French Onion Soup Recipe

French Onion Soup Ingredients:

  • 5 tbsp butter
  • 1 tsp salt
  • 2 large red onions
  • 3 large sweet onions
  • 2 cups beef broth 
  • 6 cups of chicken broth *for the broth, you can use real, canned or powdered and mixed with water
  • 1/2 cup red wine (any red wine)
  • 1/8 cup Worcestershire sauce (this is the secret ingredient here, can add more at the end if you want to boost the flavor!)
  • Balsamic vinegar (secret ingredient number two! Adds major flavor to soup)
  • Thyme: 1-2 fresh sprigs or 1/2 tsp of dried thyme
  • salt and pepper to taste

To top the French onion soup:

  • Sliced Italian bread (you can really use any fresh bread slices, but that is my own preference!)
  • Swiss/gruyere cheese (either-or, or the blend of them works well)
  • Mozzarella cheese, grated to cover the top of the soup
  • A dusting of paprika

French Onion Soup: Directions

1. Melt butter in a deep pot and add sliced onions. Let them cook 45 minutes until they are caramelized and sweet. If they are looking dry through the cooking process, you may want to add a lid to your pot to retain some of their moisture.

2. In the same pot, once your onions are done, mix in your broths, wine, Worchestershire sauce, thyme, salt and pepper and turn your heat to medium and allow soup to simmer for 20 minutes.

3. Add the vinegar. Have a taste. You might want to add more Worcestershire, wine or vinegar depending on the flavor you are going for. I personally like to have my soup a little on the vinegar side so I usually add a bit more here. If you feel your French onion soup is missing something, adding a touch more red wine will add a full-bodied, more earthy taste to it.

4. Preheat your broiler on low if you have oven-safe bowls you are going to be serving this soup in. I love to use my ceramic bowls for these kinds of soup. You can find similar ones to the ones I have pictured right here on Amazon. These ones are really nice, I have always liked the ceramic bowls with handles for French onion soup.

5. Arrange bread slices on a baking sheet and brush with a bit of butter or some olive oil. Broil for 2 minutes per side just to crisp them up a bit

6. Take the bread out and place your bowls on the baking sheet. Fill until 2/3 of the way full with your soup. Top your bowl with your bread (if too big can cut bread in half), and top bread with some cheese: 1-2 slices and some grated mozzarella to get that long pulled cheese when you take a bite. Mouth watering yet?

7. Broil 5 minutes or until cheese gets bubbly and slightly browned on top. The cheese may bubble over the bowl and drip down the sides, but the mess is all part of the beauty of this recipe! You will want to serve as soon as this comes out of the oven to take advantage of the melted cheese.
